The meaning of the word ‘Santoku’ clearly explains what it is best used for: the ‘three virtues’ or ‘three uses’ of chopping, dicing, and mincing. Santoku knives are particularly adept at creating very thin slices of foods, which improves the overall aesthetics of completed dishes. Wide at the heel, and stays wide almost to the rounded tip and is lighter, making it easier to use. The blade end is blunt rather than pointed, and the dimples on the knife helps release thin slices and sticky food – so useful if you cook a lot of Asian cuisine. The little dimples, puts a little pocket of air when your chopping, dicing or mincing meat, fish or vegetables, which helps release easier.

Yaxell Super Gou blades feature an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 161 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of red and black resin and linen Canvas Micarta with three stainless steel rivets. The canvas material is dyed red and black and brilliantly finished to last for decades. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted in Seki City, Japan.
